Course Description

The course curriculum provides an in-depth understanding of verification and validation of HACCP plans and Food Safety Management Systems. The course includes case studies and small working group sessions to provide participants with a working knowledge of validation and verification and enables participant to enhance food safety in their own facilities.

• Differentiate between Verification and Validation Activities

• Identify the Components of Prerequisite Program Verification

• Identify the Components of CCP Verification

• Identify the Components of HACCP System Verification

• Identify the Components of HACCP System Validation

• Identify Regulatory Requirements for Verification and Validation

• Identify the differences between a HACCP Plan and HACCP System

• Identify the HACCP system verification records

• Demonstrate how to interpret and utilize the results of a HACCP System Verification

• Contrast the differences between HACCP System Verification and HACCP Plan Validation

• Propose how to evaluate the Hazard Analysis and other components of a HACCP Plan (I.E. CCP, Critical Limits, Monitoring Activities, Corrective Actions, Verification and Record-Keeping)

• Identify examples of activities conducted in a HACCP plan validation

• Demonstrate how to interpret and utilize the results of a HACCP Plan Validation

Who Should Attend?

Any Food Safety Professional including those in industry, government and academia interested in further developing their understanding and skills in HACCP. Participants should have some prior training and experience in working with HACCP.
